White chocolate and ginger cookies
Adapted from my great Aunty Idas recipe.
Ingredients
250g butter, softened
1/3 cup white sugar
1/3 cup brown sugar, firmly packed
1/2 cup condensed milk
2 teaspoons vanilla
200g white chocolate, roughly chopped
50g glace ginger, finely chopped
2 cups self-raising flour
1/2 cup plain flour
Process
Cream butter and sugars until very pale. Add condensed milk and vanilla. Mix. Add flour. Mix well. Fold in chocolate and ginger.
Drop teaspoon fulls of mix onto lined baking trays. Bake at 180degC for approx 10 mins. Cookies should be nice and golden.
Cool and store in an air tight container for up to 5 days.
Makes approx 4 dozen cookies.
